All selections are beautifully garnished on high quality disposable black trays or in baskets.  
Mix and match for afternoon receptions, weddings, get-togethers, and/or corporate functions.

Vegetables, Fruits and Cheeses

Vegetable Basket with Dip 
An assortment of seasonal fresh vegetables 
presented in beautiful keepsake baskets. 
Choice of dips include: 
Spinach-Ranch, Roasted Red Chili, 
Pesto Hummus, or Honey Mustard. 

Small (serves 20 and includes one dip)

Honey Baked Brie En Croute
A kilo of brie baked in puff pastry, brushed with honey, and garnished with fresh fruit.  
Includes a basket of assorted crackers.

Assortment of Cheese and Crackers (Minimum of 10)
A variety of cheeses arranged beautifully on a tray.
Includes a basket of assorted crackers, and toasted breads.

Three Cheese Torte
Roquefort and chevre layered with olive oil, basil, and roasted peppers within a kilo of brie,
making this a delicious and unique torte. Surrounded with grapes and seasonal fruit.  
Serves at least 30.

Fancy Sandwich Platter
An assortment of four dozen party sandwiches: brioche rolls with ham and orange butter, 
roast beef on Italian bread with horseradish cream, turkey on wheat rolls with cranberry 
mayo, and pecan chicken salad on wheat roll.

Beef Tenderloin Petite Sandwiches
Four dozen tenderloin sandwiches on foccacia with horseradish cream.

Curried Chicken Croissants
Twenty four croissant sandwiches filled with curried chicken salad and 
sweetly seasoned roasted almonds.

Chicken Chipoltle Ciabatta 
Grilled chicken on rustic ciabatta bread with chipotle mayo, cilantro, 
pepperjack cheese, and roasted garlic black bean spread. 
Three dozen pieces to a tray.

Cuban Style
Crusty Cuban style bread layered with baked ham, roasted pork lion, 
sliced dill pickles, Swiss cheese, and mustard. 
Three dozen pieces to a tray.

Sandwich Margharita
Seasoned roma tomatoes, slices of mozzarella, 
and fresh basil leaves on ciabatta.  
Four dozen pieces to a tray.

Veggies

Black Bean and Vegetable Empanadas
Four dozen hand made vegetarian pastries filled with vegetables, cheese, and black beans.  
Served with our homemade salsa verde. 

Vegetable Spring Rolls with Peanut Dipping Sauce
Fresh and light, these delicious spring rolls are a welcome addition to any gathering.  
Stuffed with crisp shredded vegetables, and served with our spicy peanut dipping sauce. 
Four dozen hand made rolls.

Spinach Hummus with Pita Triangles
Our marvelous spinach hummus surrounded with red and green bell peppers,
 cauliflower, zucchini, and a basket of pita triangle crackers. 
Serves 35-40.

Feta, Spinach and Pinenut Triangles
Phyllo pastry wrapped around delicious feta cheese, spinach, and pine nuts.

Shitake Mushrooms and Spinach Tarts
Fifty quiche-like tartlets filled with spinach, cheese, garlic, and shitake mushrooms then drizzled with truffle oil. 

Black Bean and Pepper Jack Cheese Quesadillas
Quesadillas with marinated black beans, spicy pepper jack cheese, and 
Mexican spices. Serve at room temperature, or heat before serving. 
Four dozen per tray.

Assorted Stuffed Appetizers 
An assortment of fancy stuffed appetizers: New potatoes stuffed with spinach mousse; 
Greek peppers filled with herb cheese; zucchinis filled with squash, 
eggplant and sun-dried tomatoes; celery stuffed with chive cream cheese;

Breaded Parmesan Artichoke Hearts
Quartered artichoke hearts topped with goat cheese,

Crispy Cashew Chicken Egg Rolls
A wonderful combination of white meat chicken, cashews, and julienned vegetables.
Served with an Asian ginger soy sauce.

Smoked Duck Quesadillas
Fifty exotic tasting quesadillas with smoked duck, chipotle peppers, 
queso fresco, and pepperjack cheese. 
Served with mango salsa. One of our favorites! 

Hickory and Pecan Smoked Chicken Tenders
Smoked chicken tenders on wooden skewers, glazed with Corsicana pecans and honey.  
Four dozen Texas treats.

Thai Chicken Skewers with Red Peppers
Four dozen Thai-marinated chicken strips, breaded with sesame seeds 
and skewered with a red bell pepper garnish.

Fiesta Pinwheels
Cream cheese, chopped chicken fajitas, roasted chiles, and a ton of secret ingredients jelly-rolled 
inside fresh tortillas.  Four dozen individual pieces are arranged around a bowl of our salsa.

Jamaican Jerk Chicken
Jerk marinated chicken tender skewers. Spiced just right. Offered with a mango spiced sauce

Chipotle chicken and tangy salsa with crushed chiles combined

One hundred cold boiled shrimp, Cajun marinated, and ready to eat.  
Garnished with lemon wedges, and cocktail sauce.

Lump Crab Cakes
Four dozen of our fabulous silver dollar crab cakes presented on 
a tray with a spicy remoulade sauce.

Smoked Salmon Roulade
Norwegian smoked salmon, capers, herb cream cheese, and marinated 
red onions stuffed inside a flour tortilla.

Olé Crab Quesadillas
Four dozen spicy crab quesadillas made with fresh Texas lump crab and queso blanco. 
Served with pico de gallo and salsa verde.

Chile Lime Salmon Satay      
Fresh Atlantic salmon seasoned with a robust Southwest spice and a touch of lime. 
Fifty pieces on skewers to an order.

Crab and Mango Salad Puffs
Light and buttery pate a choux filled with Caribbean crab and mango ceviche.
Four dozen to an order.

Pesto Shrimp Skewers
Mediterranean pesto marinated shrimp sauteed and skewered, placed on a decorative tray.

Spring Rolls with Shrimp and Vegetables

Asian Meatballs
Little appetizing pork and beef meatballs with a light garlic-ginger sauce. 
One hundred meatballs to an order. 

Asparagus Wrapped with Prosciutto
Italian prosciutto wrapped around fresh asparagus with red pepper mousse and drizzled with extra virgin olive oil.

Mini Beef Wellington
Bite size pastries filled with beef and a rich Wellington sauce.

Black Bean and Fajita Beef Empanadas
Four dozen hand-made pastries filled with black beans, vegetables, cheese, and fajita beef.  
Served with salsa verde.

Beef Tenderloin Tray
Marinated with cracked pepper and garlic, thinly sliced and presented on a tray with garnish and a choice of
horseradish mousse.  Served with a basket of assorted dinner rolls.  
Serves approximately 20.

New Potato Appetizers
Small new potatoes filled with spinach, bacon, and  garnished with spinach cream cheese mousse.  One of our most requested appetizers!  
Four dozen per tray. 

Sugar and Spicy Bread Sticks
Four dozen extra long bread sticks are wrapped in bacon, caramelized with 
brown sugar, and a touch of heat.

Italian Sausage Stuffed Mushrooms
Fifty whole mushroom caps filled with a mild Italian sausage mix.

Thai Beef Satay
Tender pieces of beef marinated with ginger, garlic, 
sambal, and curry - served on mini skewers.
